Masala Khichdi

Basmati Rice | Yellow Moong Dal | Mixed Vegetables (carrots, peas, beans, potatoes, cauliflower) | Onion (chopped) | Tomato (chopped) | Ginger-Garlic Paste | Green Chilies (slit) | Turmeric Powder | Red Chili Powder | Garam Masala | Mustard Seeds | Cumin Seeds | Curry Leaves | Ghee/Oil | Water | Salt | To taste |
Pointers:
- Wash rice and moong dal together.
- Heat ghee/oil in a pressure cooker or pot.
- Add mustard seeds, cumin seeds, and curry leaves.
- Add onions, ginger-garlic paste, and green chilies. Sauté.
- Add tomatoes and cook until soft.
- Add vegetables, turmeric powder, red chili powder (if using), garam masala, and salt. Cook for a few minutes.
- Add washed rice and dal, and water.
- Pressure cook (or cook in a pot) until rice and dal are cooked and soft.
- Mash slightly for a smoother texture.
- Serve hot.
